ORGANIC/GRASS FINISHED MEATS AND EGGS
The
following local farms raise their livestock on
pasture, “finishing” them entirely or mostly without
confinement of animals, or additions of grain. All
of these farmers do not use growth hormones
or antibiotics. The result is amazing: Very lean,
high quality beef, lamb, poultry and eggs low in
cholesterol and rich in nutrients, amino acids and …
flavor!
This
approach to raising livestock – known as
“pasture-based” or “grass finished” – is far
healthier and more humane for the animals, as they
are not confined, except briefly in the coldest
winter months, in the case of beef cattle. And
what’s more, a pasture-based livestock system is
ecologically regenerative rather than
destructive, as grass rather than grain feeds these
animals, and manure directly feeds the soil, rather
than becoming a source of water pollution. Try

Clinch Powell Community Kitchen / Appalachian
Spring Cooperative
The community kitchen, located in Hancock County,
TN, offers a low cost, state of the art facility for
processing foods for commercial resale. It is
designed especially for the small to medium size
food business, with technical expertise available
on-site. The Appalachian Spring Cooperative includes
more than 2 dozen such food entrepreneurs, and
offers assistance in labeling, bulk buying of jars
and other supplies, and marketing.
Virginia Cooperative Extension and University of
Tennessee Agricultural Extension
Extension services offer a wide array of experience
and knowledge related to production agriculture.
They offer soil testing for free (or for a nominal
expense), will visit farms to help diagnose problems
and help work towards effective solutions.
